Prevent food-borne illness
at summer gatherings
Food safety basics can keep food
poisoning from spoiling summer
picnics and cookouts, says a state health
official.
“Hot weather is a food safety
challenge because bacteria in food
multiply faster anytime the temperature
is above 40 degrees,” said Clark Hepper,
health protection administrator for the
Department of Health.
Hepper recommended the following
steps for cooking outdoor meals:
• Start with hand-washing. Use moist
disposable towelettes if soap and water
aren’t available.
• Keep raw foods separate from
cooked foods. If a plate held raw meat,
don’t use it again without first washing
it in hot, soapy water.
• Marinate foods in the refrigerator,
not on the counter or outdoors, and
don't reuse marinade. For use as a
sauce, set some aside before adding
food.
• Use a food thermometer to make
sure food is cooked thoroughly. Cook
hamburgers to 160 degrees and chicken
to at least 165 degrees.
• Keep hot food hot (140 degrees or
above) and cold food cold (40 degrees
or below).
• Refrigerate or freeze leftover food
promptly. Don’t let perishable foods sit
out longer than two hours; no more
than one if temperatures are above 90
degrees.
Food-borne illnesses often go
unreported so the actual number of
cases is likely higher than what’s
reported. In 2011, South Dakota
reported nearly 500 cases of the foodborne illnesses E. coli, Salmonella, and
Campylobacter.
To date in 2012, more than 200 cases
of such illnesses have been reported, as
well as nearly 100 cases of clostridium
perfringens associated with improperly
cooked and stored meat at a special
event. These diseases can also be spread
directly by farm animals and their
manure.
Symptoms of food-borne illness can
include mild or severe diarrhea, fever,
vomiting and abdominal pain. Some
people may need fluids to prevent
dehydration but most will recover at
home without medication.

St. Paul Church kicks off sesquicentennial year
St. Paul Lutheran
Church, located
approximately 12 miles
east of Vermillion at
31903 475th Ave., will
kick off the year leading
up to its Sesquicentennial
Celebration during the
worship service at 10:30
a.m. Sunday, July 8. This
service also will celebrate
the 90th anniversary of
the dedication of the
current St. Paul Church
building and its pipe
organ.
The service will be
conducted by the Rev.
Tim Thies, interim pastor
of St. Paul, and will
include portions of the
dedication service
conducted on July 9,
1922.
A luncheon featuring
homemade breads, a meat
and cheese tray, a variety
of salads and homemade
pie and ice cream will
follow the service.
Theme for the
Sesquicentennial
Celebration is “Forward
in Faith.” The Bible verse
selected for the
celebration is Psalm
122:1, “I was glad when
they said to me, ‘Let us go
to the House of the
Lord!’”
The 150th anniversary
celebration is scheduled
for July 20 and 21, 2013.
A souvenir ornament
commemorating the
sesquicentennial features
the exterior of St. Paul
Church. The ornament is
available for purchase at
the church or by sending
a letter to the 150th
Anniversary Committee,
c/o St. Paul Lutheran

is $12 each plus postage.

officiated at the
dedication service in July
1922. He was assisted by
the Rev. N. Boe, of Sioux
Falls, district president.
The Rev. A.J. Bergsaker
was the pastor of St. Paul
Church at that time.
Professor Henrik
Gunnersen of
Minneapolis presented a
pipe organ concert during
the three-day celebration
of the dedication of both
the church and the organ.
The cost of the church
was $85,000; the cost of
the organ was $5,000.
St. Paul Church, the
first Lutheran church in
the Dakota Territory, was
organized in August of
1863.
Vermillion Reds sweep

The Vermillion Reds, the younger of
the two Teener teams, closed its home
schedule at Prentis Park with a
doubleheader sweep of Lennox
Saturday.
Vermillion dominated the first game,
closing it down with a four-run fifth
inning that gave them an 11-1 win via
the 10-run mercy rule. It was decided
to play two more innings as another
game, and the Reds also won that one,
2-0.
Brett Hanson pitched all five innings
of the opener. After escaping a basesloaded situation in the first inning, he
was never in trouble once his team gave
him a big lead. Hanson picked a pair of
runners off base, catcher Brandon
Mockler picked another off third, and
shortstop Carter Kratz contributed with
a snare of a line drive that he turned
into a double play.
On offense Hunter Christopherson
and Joe Miller reached base all four
times they batted. Christopherson had
three hits and two RBIs while Miller
and Riley Peters each had two hits with
one RBI.
In the abbreviated second game Billy
Mount drove in a run with a single, and
Hanson, who had the other Reds hit,
scored the second run scored on a
catcher's throwing error.
The Reds have a return date at
Lennox on Monday at 6:30 p.m.
