2018 IFT Food Technology
Conference In Chicago
BROOKINGS, S.D. - Ten students
and five faculty members from South
Dakota State University will attend
the Institute of Food Technologists
(IFT) Food Technology Conference in
Chicago from July 15-18, 2018.
The Dairy and Food Science
Department graduate students who
are attending include Beatrice Manu,
Tanvee Deshpande, Kara Konst, Bipin Rajpurohit, Aliza Sigdel, Mohamed Elfaruk and Brady Bury, as well as
undergraduate student Emily Resch.
Prachi Pahariya, graduate student in
the Department of Agricultural and
Biosystems Engineering, will also be
attending.
Two graduate research posters
will be presented. One poster is
titled, “Effectiveness of a Vacuum
Dough Expansion System in Measuring Dough Expansion Attributes for
Predicting Bread Loaf Volume” and is
authored by Bipin Rajpurohit; Daniel
Brabec, a research agricultural
engineer with the USDA Agricultural
Research Service; Karl Glover, SDSU
professor and spring wheat breeder;
Sunish Sehgal, SDSU assistant professor and winter wheat breeder; Padu
Krishnan, SDSU professor. Rajpurohit
was also selected to present this
research project in a competition at
the conference.
The other poster that will be
presented is titled, “Extraction of
beta-carotene from carrot using
ultrasound, microwave and infrared
techniques,” and is authored by
Prachi Pahariya and Kasi Muthukumarappan, distinguished professor
and graduate coordinator.

and Prachi Pahariya received Min-
nesota Section IFT scholarships to
attend the conference.
Lloyd Metzger, professor, will
present on “Manufacture, functionality, and applications of milk protein
concentrate and micellar casein in
cheese.”
Krishnan and Srinivas Janaswamy,
assistant professor, will participate
in the 2018 Section Leadership Forum on July 14 and 15.
Muthukumarappan and C.Y. Wang,
professor, will also attend the conference.
“This conference is a really nice
way to network with people, make
connections and learn about other
research going on,” Krishnan said.
The research work being presented was conducted through support
from several competitive grants of
faculty members.
Construction Permit For Dakota
Range Wind Project Approved By PUC
PIERRE, S.D. – The South Dakota Public Utilities Commission approved a permit with numerous conditions
for the construction of the Dakota Range Wind Project, a
wind energy facility in Grant and Codington counties capable of producing up to 302.4 megawatts of electricity.
The project is expected to include up to 72 turbines
and associated facilities located within an approximately
44,500-acre project area 10 miles northeast of Watertown, South Dakota. Dakota Range expects to complete
the $380 million facility in 2021.

meeting in Pierre. Aircraft detection lighting, detecting
and reacting to ice conditions on turbine blades, and
avian mortality monitoring are among issues addressed
in the 42 conditions.
“As commissioners in a quasi-judicial role, we are
bound to follow what is spelled out before us in state law
and to base our decision on facts and evidence,” PUC
Chairperson Kristie Fiegen explained. “The conditions
we arrived at address landowner protections and the applicant’s obligations,” she said.
PUC Vice Chairman Gary Hanson stated: “The comprehensive conditions we imposed on the permit will
ensure the facility is built and operated in a manner
that is responsible and fair to all parties as well as the
environment.”
“State law lays out the criteria in which a permit must
be granted. I believe this project has met that burden,”
Commissioner Chris Nelson said. “I extend my thanks
to the PUC staff, intervenors and Dakota Range for the
information provided to the commission during this
process.”
Dakota Range filed its application with the PUC on
Jan. 24, 2018. State law requires the commission to make
a decision within six months of receiving a wind energy

facility application. A public input hearing was held in
Waverly in March. An evidentiary hearing was held in
Pierre in June. Parties to the docket included Dakota
Range, PUC staff and 12 intervenors. Intervenors Kristi
Mogen of Twin Brooks and Teresa Kaaz of South Shore
were active participants, representing themselves at the
formal hearing and related proceedings.

Century Club
Announces Oldest
Living South Dakotan
The South Dakota Health Care Association’s Century
Club, along with KELOLAND Television, is pleased to
announce Vivian Grover as the 2018 Centenarian of the
Year! Born in February of 1911, Vivian is 107 years old,
and the oldest member of the Century Club!
“Congratulations to Vivian on being honored as our
Centenarian of the Year,” said LuAnn Severson, Century
Club Coordinator. “Her lifetime of experience is an inspiration for all of us.”
Vivian grew up on a farm outside of Dover, Minnesota,
getting up early every morning to milk cows and do other
chores, before walking a mile to school. She moved into
town and lived with her aunt to attend high school.
She met the man who would become her husband,
Harry Grover, while visiting her brother in Rapid City.
They were married November 30, 1931. Together, they
worked a ranch, then later owned Grover’s store in
Keystone, and worked for Donaldson’s department
store in Rapid City. Vivian also was a deputy clerk for
the magistrate court, an especially notable achievement
because Vivian’s formal education ended after two years
of high school. She remains very proud of her service
with the court. Vivian’s husband passed away in 1987.
She currently resides at Fountain Springs Healthcare in
Rapid City.
Vivian helped raise her husband’s three children in a
blended family, and has 10 grandchildren, 25 great-grandchildren, 57 great-great-grandchildren, and 12 great-greatgreat grandchildren.
Throughout her life, Vivian has loved to travel, including visits to England and France, as well as bus trips
around the country, cruises, and fishing trips. She went
whitewater rafting in Colorado when she was 83 and
hiked Black Elk Peak every year until she was 84 years
old. She believes that her active lifestyle has been one of
the reasons she has lived so long.
“Do what you want to do,” is Vivian’s advice to others.
“I’m just thankful I am here today, and that I can drink
coffee, eat, and have a good night’s sleep.”
The Century Club was created by the South Dakota
Health Care Association to recognize South Dakotans age
100 or older, both for their longevity and their contributions to our state. Over 1,200 South Dakotans have been
inducted into the Century Club since its founding in 1997.
The Century Club is, as its name states, a club. Therefore,
there may be older people in the state that have not yet
been inducted by a family member or loved one into the
Century Club.
The Century Club is open to any resident of South
Dakota upon the celebration of his or her 100th birthday.
There are no dues and each inductee receives a specially
designed certificate and membership card. Once a year,
the current oldest living Century Club Member is recognized as the “Centenarian of the Year.” Submit names for
