1 stick butter, preferably unsalted,
at room temperature
2 tsp fresh thyme leaves
3 Tbsp fresh oregano leaves, chopped
2 Tbsp fresh chives, chopped
My substitute equal portion of your
favorite herbs; may add more or less
herbs to taste
1 Tbsp olive oil
Salt and pepper
Butter should be softened so that it retains a finger mark, but
still retains its shape (not runny). Put herbs in food processor and
pulse until chopped to approximately ¼” – ½” pieces. Add butter.
Pulse 3 or 4 times. Turn on processor and drizzle in olive oil.
Scrape sides and bottom as needed. Add salt and pepper to taste.
Process until blended. Refrigerate (or freeze).
This is super easy and highly useful. Frozen, it can keep for a year;
just roll it into a log, wrap in wax paper, put in a freezer bag. Then,
slice off what you need as you need it. Use a pat on top of cooked
steaks. Use in place of butter in recipes to give an herb flavor to
biscuits or other breads. Mix with warm pasta. Spread on bread.
Toss with cooked vegetables or into ground beef or pork.

Mint-Honey Spread
1 cup packed fresh cilantro leaves
1 package (8 oz) cream cheese softened
¼ cup mint leaves, rough chopped
1 Tbsp honey
Salt
Pulse mint leaves in food processor until chopped to about ¼”
pieces. Add cheese and hone. Process until smooth. Add salt to
taste. Serve cool or at room temperature. Garnish with mint sprig.
Great spread on bagels, crackers or toast. Also yummy as a cake
filling or icing for brownies.
